At the helm is Executive Chef Tim Condon, whose passion for food has fueled a career in the culinary industry since 1998. With experience in some of the finest kitchens across the country, Chef Condon brings an expert touch to every dish. His deep understanding of Texas-sourced ingredients and innovative approach to cooking have shaped a menu that is both diverse and unforgettable.

From our signature smoked meatloaf to our perfectly crisp chicken fried steak, every dish at The Angry Cactus is crafted using the freshest ingredients and cooked to perfection. We also offer a variety of vegetarian and gluten-free options, so there’s something delicious for everyone to enjoy.

Our full bar features an impressive lineup of craft beers, curated wines, and handcrafted cocktails. Whether you’re craving a classic margarita or one of our house favorites like the Spicy Cactus Bloody Mary, our bartenders are ready to mix up the perfect drink to pair with your meal.

And we’re growing! Chef Tim Condon is bringing The Angry Cactus experience to a new location in Abilene, Texas, set to open in 2026. We can’t wait to share our signature Texas flavors with even more guests in the Lone Star State.

MEET THE CHEF


Timothy W. Condon was born and raised in Omaha Nebraska. At age 10 Tim started developing a love for great food in his family’s kitchen. By the time he was 14, Tim started working as a cook in the restaurant industry. Soon he was interning as a chef at some of Omaha’s best restaurants and country clubs.

After graduating high school Tim attended The Institute for the Culinary Arts. While attending culinary school he began hosting cooking shows and classes at Dillard’s and Ser la Table.

By age 18 Tim was working as a Sous Chef at the prestigious Skyline Woods Country Club in the Omaha area. There he developed a signature multicultural style of cooking. He also began to develop a love of great wine.
